This Keng Ped Short Rib sees short ribs braised in a rich curry paste thinned out with coconut milk. Into the curry goes Thai eggplant, Thai chili, fresh peppercorns and Thai basil. It’s a wonderfully warming Winter, begging to be ladled over mounds of steaming Jasmine rice.
